Spicy Sugar-free Apricot Spread


Every time autumn comes around and the trees changes their leaves, my food preferences changes along with it. At this time of year it is all about baked apples, hot tea, mushrooms, hearty pies and of course lots and lots of spices. Cinnamon, nutmeg, ginger and cloves are classic spices that I enjoy every fall, especially combined with delicious fruits. This recipe is for a really tasty apricot spread, that uses all of those spices, and honestly tastes just like autumn. Even the color matches the soon-to-come colorful leaves! 

Personally I love using this as a jam on top of brown rice cakes, Vegan and Gluten-free Breakfast Muffins or my homemade gluten-free bread (either my whole grain bread or the basic gluten-free bread). In recipes where apricots are used, such as in the recipe for Oat Apricot Pancakes, it tastes delicious as a topping.


Well, enough me rambling about all the things I love about fall (like you probably have noticed by now, I love everything about it), and on to the recipe.

Ingredients, makes 1 medium jar:
  • 500g dried apricots
  • 2 cups water 
  • 1 tsp lemon juice
  • 2 tsp vanilla essence
  • cinnamon
  • ground nutmeg
  • ground ginger
  • ground cloves
Directions:
  1. In a pot bring the water and lemon juice to a boil before adding in the dried apricots. Cover this with a lid and let cook until the apricots are properly tender, about 5-10 minutes. Let this cool, pour into a blender/food processor and blend until it is as smooth as you like it (I prefer leaving it slightly chunky). Gradually add in the spices and vanilla while tasting, so you get the seasonings just as you prefer. Store in an airtight jar/container in the fridge and it will hold for at least 1 week, probably longer.


If you want you can make this in a larger quantity and freeze them down in individual plastic boxes, so that you always have them ready when you want some.

  1. This looks delicious. I am slowly on my way to being vegetarian. Don't know if I'll reach veganism, but love trying out healthy recipes. I am going to try this and will let you know more once it's made. Thanks for your inspiring blog!
