Raw Vegan Green Spinach Overnight Oats

Sorry for not posting anything yesterday, the day literally went by in a flash. I really wanted to upload a recipe for apple cupcakes with cinnamon frosting, and I had it prewritten and everything, but I managed to forget my cable for the camera where the pictures are back home in Norway. Luckily I found that I had not yet posted this recipe that I made a while back. This is quite a different recipe for overnight oats as far as I am concerned. In most recipes for overnight oats I have seen (and my previous one), they usually call for bananas as a base to get the right consistency. But I wanted to give the dish a vibrant green color, and therefore used avocado instead. It compliments the spinach and oats perfectly, and it tastes especially delicious topped with a pinch of maldon salt and freshly ground black pepper.

As you might know, I am currently on vacation in New York with my father, and we will stay here until the 8th of October. We just came back from a 10,4 km long run in Central Park, and I was in awe of how many other people were up so early running as well. The terrain was some of the best I have ever experienced and I wish I could run here every single morning. New York really is a magnificent city, and completely lives up to the expectations we had coming here. Walking around in the streets I feel like a little ant, seeing as everything around me is so incredibly large. The city is filled with gigantic skyscrapers, yellow taxis and a rich diversity of people, that all have the American charm to them. One of the first things I noticed coming here was that the people were so friendly and outspoken, which is the exact opposite from Norway. Not that norwegians are unfriendly, but generally we never talk to people we do not know. It is an alright change, but a bit unusual nonetheless.

Even though there are so many reasons to why I could imagine living here, I do not think I could manage being in a place where it is so polluted. One of the things I value the most with where I currently live is that we are only a short car ride away from the most beautiful woods, and the air is always so fresh. Well, enough rambling and on to the recipe!

Ingredients, makes 1 serving:
  • 1/2 cup certified gluten-free (raw) oats
  • 1 cup water
  • 1/3 avocado
  • 1 cup spinach, torn into small pieces
  • 1 tsp ground flax/chiaseeds 
  • a dash of lemon juice
  1. Combine all the ingredients together in a bowl except for the spinach, and leave this in the fridge overnight. To avoid the spinach from going soggy, add that in right before you eat it the morning after. Serve with freshly ground black pepper and/or maldon salt.

All in all this is a really great way to get your vegetables in, all while tasting incredibly yummy. As always I hope you enjoyed this post, and let me know if you liked it!
