Healthy Vegan Apple Cake Oatmeal


First off, let me just say that I really love all kinds of oatmeal and basically anything containing baked apples and cinnamon (especially now that is is finally autumn). So I thought what better way to combine these things I love by making an apple cake oatmeal. To add a little bit of extra sweetness I added in a bit of my Spicy Apricot Spread, but you can use either unsweetened apple sauce or date syrup instead. Or just leave it plain if you prefer it a bit less sweet.


Last weekend I went to this amazing farm along with my mother and little sister, where we picked lots of fresh corn kernels, sugar snap peas, kale and other vegetables. There is something so delicious with the taste of locally grown fruits and vegetables. I wish we had these Farmer's Marked I keep hearing about in America. Sounds like so much fun being able to buy locally grown produce so often. Here we can only buy it once a year or so, which means that when we first go, we have to really stock up. With a freezer now filled to the brinks with delicious vegetables there will definitely be a lot of great dinner recipes coming up soon. 

 

Anyways, as we were paying for all of these things, something really caught my eye. It was this massive red apple (seriously it was larger than a mango), and I just had to buy it. From there on I was inspired by my Apple Cake recipe, and it just went from there. Who knows, I might make a carrot cake oatmeal recipe as well in the near future? 


PS: With some additional cinnamon, soy milk and apricot spread, it is just pure heaven in a bowl!

Ingredients, makes 2 servings:
Spices, to taste:
  • cinnamon
  • nutmeg
  • cardamom
  • ground cloves


Directions:
  1. Start by cooking the water, soy milk and oats in a pot for about 5 minutes, before adding in the chopped apples and vanilla. Let this cook for another 5 minutes or so, until the oats are properly cooked and the apples are tender. 
  2. Remove the pot from heat and stir in either the apricot spread, apple sauce or date syrup, and start adding in the various spices while tasting. When you are satisfied with the seasoning you can choose whether you wish to add in an additional dash of soy milk or just eat it as it is.
