Simple Super-Spicy Salsa


This salsa is the perfect spicy addition when making taco, and it tastes so much better than the canned salsas you buy at the store. This sauce can hold in the fridge for at least one week, perhaps two, provided it is stored in an airtight container. For the perfect taco evening simply chop up your favorite vegetables, oven-bake healthy tortilla chips, make homemade guacamole, and cook up TVP mince with taco spice mix!

I always make sure we have a large jar of homemade spicy salsa in the fridge, because I just cannot stand the canned stuff. Fine the store-bought salsas tastes alright, but the colors in this otherwise healthy dish just look artificial and bland in my eyes, and it is always loaded with sodium and refined starches. My favorite parts about this simple sauce is that it is so quickly made (seriously it takes less than 15 minutes!), and the colors are so incredibly vibrant. 

Ingredients:
  • 4 large tomatoes, chopped
  • 2 garlic cloves, minced (or garlic powder)
  • 1/4 large red onion, chopped
  • 1/2 jalapeño, chopped
  • 1 chili pepper with seed, copped (NOTE: omit the seeds if you do not like it very spicy!)
  • 1 large handful cilantro, roughly chopped
  • 4 tbsp tomato purée (more or less depending on how you like your salsa's consistency)
  • 2-3 tbsp lime juice (lemon works too)
  • 1 dash of cumin
  • 1 pinch maldon salt
  • 1 tsp vegan vegetable stock powder (optional)

Directions:
  1. Combine all the ingredients into a bowl, and using a hand blender roughly blend the salsa. You can alter how much you decide to blend it depending on whether you like it chunky or smooth. Also if you are somewhat sensitive to spicy food I suggest you do not use the seeds, or at least add it in gradually after you have blended it so you can taste as you add it. That way you will get it just as hot as you can handle.
