Simple Salad with Low-fat Hummus Dressing



After declaring my love for hummus in the last post, my homemade hummus recipe, I felt I needed to provide you with some different ways to serve it! Sure, dipping baby carrots in hummus is delicious enough on its own, but for those of you looking for a different option this is the dish for you. Even if you do not like dressing on your salads (I usually hate dressing) this is really tasty, without being too heavy.
Ingredients, one large salad:
  • Your favorite leafy green (I usually use spinach and arugula)
  • 1 large on the vine tomato
  • 1/2 red bell pepper
  • 1/3 large cucumber
  • Juice of 1/2 lemon
  • 200g hummus
Optional additional ingredients:
  • olives
  • corn kernels
  • red onion

Directions:
  1. Chop up all the vegetables and place in a large salad bowl, and in a separate bowl combine lemon juice and hummus and stir thoroughly. Now just add the hummus into the salad bowl and mix until the salad is evenly coated. Optionally you can top it with a pinch of maldon salt and freshly ground pepper.


Personally, I have this salad every single day for lunch, and I always make sure to bring a big jar of hummus with me whenever I am traveling somewhere I am not able to cook a lot of food myself. That way, when my family wants to eat out, I can bring a small container with hummus with me to a restaurant, and ask for a large salad without dressing and a lemon on the side.

  1. This has become my go-to salad recipe, it is super simple and incredibly delicious! I like to add in some kidney beans as well for increased protein, and it tastes amazing. I always have a large tub of hummus based on your recipe, so thank you for sharing that.
