Vegan Mac N' Cheese With Sliced Tomatoes

One of my little sisters favorite comfort foods has always been mac n' cheese, and she was rather heartbroken at the thought of having to give it up when she decided to go vegan as well. Therefore I got creative and made my own vegan version, which she even though was better than original mac n' cheese! Coming from her, she used to proclaim her self as a cheese-tarian when she was vegetarian, that means a whole lot.

This requires very little preparation time, since it is mostly just boiling the pasta and placing it in the oven. I made enough for 3 people and used 200g brown rice macaroni and the white sauce as listed in the recipe. What I did was adding freshly sliced tomatoes and gluten-free crackers on top before putting in the oven. If you want you can add in a tablespoon or two of tomato puree into the sauce instead of the sliced tomatoes.

  • 50-75g dry wholegrain/gluten-free macaroni per person (I use brown rice macaroni)
  • 2 thinly sliced tomatoes (optional)
  • 1/4 cup crushed wholegrain gluten-free crackers/bread crumbs (optional)
  • White "cheese" sauce recipe here

  • Cook the pasta as written on the package until al dente. While it cooks prepare the white cheese sauce as written in the recipe.
  • Drain the cooked pasta and place in an oven resistant dish with the white sauce on top. Optionally place the tomato slices on top and sprinkle on the cracker/bread crumbs. For 3 people you will need approximately the amount of ingredients listed in the white "cheese" sauce recipe once, so double the sauce recipe if you are making for more.
  • Place the dish into a preheated an oven at 190 degrees Celsius/374 degrees Fahrenheit for 15-30 minutes, or until golden on top. Depending on how the pasta and sauce ratio is the mac n' cheese will either be really creamy or a bit more firm. I prefer having it really smooth and for one time the cheese sauce recipe I use 150g pasta, and cook it for about 20 minutes. Find out what suits you! 

It is as simple as that! Whether you chose to add the tomato and bread crumbs or just make it plain, it is still a delicious dish. Serve with a fresh salad, maldon salt and black pepper.
