Vegan Gluten-free Almond Apple Pancakes

Finally, I have made the perfect gluten-free vegan pancakes! If you have ever tried making pancakes completely without gluten you know it can be quite a challenge to get them to the right consistency. I have tried and failed with a lot of different gluten-free flours. Brown rice flour and quinoa flour makes rather bland pancakes, and gives it a grainy taste. Using buckwheat is alright, but almond flour definitely makes the best pancakes. And don't get me started on the starch. Cornstarch or arrowroot starch makes the pancakes all sticky and grimy, so you should use potato flour or potato starch. This particular recipe is for almond apple pancakes, and it tastes amazing when topped with my recipe for unsweetened applesauce. For this I prefer using defatted almond flour, but you can use regular or just put almonds in a food processor and grind it until it becomes like flour. If you want you can probably make these in a waffle iron instead, and if so you have to use a bit less milk so the batter is thick enough.

Ingredients, makes 20-25 pancakes:
  • 150g almond flour
  • 85g potato flour (potato starch will work too)
  • 1 cup unsweetened soy milk (or other plant-based milk)
  • 1/2 - 1 cup unsweetened apple sauce
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp vanilla essence

  1. Whisk together all the dry ingredients in a bowl before gradually adding in the milk and apple sauce. You might need more or less than what I used depending on what brand on almond flour you are using, so add in milk until you get the batter thin enough. It should not be runny, and when cooking these you should smooth out the batter using a spatula/spoon. 
  2. Heat up a non-stick saucepan and add in one heaped tablespoon of the batter per pancake. You can make them bigger or smaller depending on your preferences, and place them on a serving plate with a kitchen towel on top so they stay warm until you are serving them.

You can have this with homemade unsweetened applesauce or any sugar-free jam of your liking. Hope you guys enjoyed this, and stay tuned for the next recipe!

  2. I have been looking everywhere for defatted almond flour!! Where do you get yours?! :)

    1. Well I found mine at the local health food store, in the gluten-free department, so depending on where you live you can try the health food store close to you and ask the staff there! Now that I am searching around I see that alot of other people from different countries also have trouble finding it.. I use a norwegian brand (link below) but they currently only ship to Norway :S Perhaps the Honeyville brand could work? Because of the altered weight of the flour you might need less or more milk, so add it in gradually!
