Vegan Chocolate Fudge Protein Brownies


This recipe is for delicious, creamy chocolate protein bars that gives you approximately 15g protein pr bar and only 100 calories, if slicing into 6 pieces. Make sure that you use chocolate flavored vegan protein powder for this recipe, and if you wish you can add in some chopped walnuts as well. This is a great post-workout snack, but keep in mind that since it is based on protein powder it will not taste exactly like regular brownies. If you were looking for something sweeter I recommend you check out my recipe for healthy vegan chocolate truffles or my gluten-free vegan chocolate cake with chocolate frosting recipe!

Ingredients, makes 6 bars:
  • 5 scoops vegan chocolate protein powder (I use Sunwarrior Raw Vegan Protein Powder)
  • 20g certified gluten-free oats ground into a flour (or use oat flour)
  • 10g unsweetened cocoa powder (defatted if you wish)
  • 1 dl unsweetened soy milk (or other plant-based milk/water)
  • 30g dates, dried apricots or raisins 
  • 2 tsp vanilla essence

Directions:
  1. Combine all the dry ingredients in a bowl, and blend together the dates, vanilla essence and liquid in a food processor before adding this in with the dry ingredients. You might need to gradually add more liquid until the batter becomes like a very sticky dough. If you do not have a blender or just want more chewy resistance you can chop the dried fruit into pieces, whatever size you desire, and just add them in to the batter.
  2. Preheat the oven to 200 degrees Celcius/392 degrees Fahrenheit. Place the batter in a small oven-proof pan (sprayed or with a baking sheet underneath) before putting it in the oven for about 15-20 minutes, just to give it a slightly crisp crust and make sure you let it rest for a few minutes before cutting into squares. 

Store these in the fridge, and they can easily hold for up to a week, maybe even longer.
