Vegan Apple Vanilla Cinnamon "Yogurt"


Delicious vegan alternative for yogurt, and my go-to snack when I want something light and sweet. When looking at the ingredients this might look weird, but trust me, it is really really good. The texture is just as creamy as regular yogurt, and with the protein powder its also a great post workout meal. Throw in some chopped nuts and raisins, and this is amazingly good. I think it will be possible to make this without the protein powder by using half the water, and perhaps more oats.

Ingredients, makes 1 servings:
  • 1 peeled, cored and chopped apple
  • 1 cup water
  • 40g gluten-free oats
  • 1 tsp ground cinnamon
  • 1 tsp vanilla essence
  • 1 scoop vanilla protein powder (unflavored works too) 

Directions:
  1. After peeling and chopping the apple put it in a pot with the water and boil the apples with the cinnamon until they are moist. 
  2. When the apple are done place it, with the water, in a blender and add in all the other ingredients and blend until smooth. If you do not have protein powder you can use less water and more oats to get it to the right texture. You might want more or less cinnamon and vanilla, that is just personal preference. 

This makes enough for two small snacks, or one meal. You can serve it with some fresh or dried fruit and nuts, or just eat it plain. Store it in an airtight container in the fridge, and it holds for at least one week.
