Raw Vegan Zucchini Pasta With Green Sprinkle and Pesto


This recipe works perfectly for those who are raw vegan, since you can substitute regular pasta and make zucchini pasta instead if you wish. Even if you do not eat raw you should try this out, because it really tastes good without being too heavy. Next time I think I will use my roasted zucchini pesto recipe instead, which can be found here.

Ingredients, for the pasta:
  • Estimate 1/2 zucchini to each person. 


For the pesto, enough for 4 people:
  • 1 zucchini, peeled and cut into cubes
  • 1-2 garlic cloves
  • 30g raw pine nuts OR walnuts
  • 1/2 cup basil leaves
  • 1 tbsp dried rosemary (fresh if possible)
  • 1 tbsp dried oregano (fresh if possible)
  • A squeeze of lemon juice


Green sprinkle:
  • 2 cups leaf spinach
  • Lots of thyme


Directions:
  • Blend all the ingredients for the pesto in a food processor/blender until smooth, while cooking the pasta according to the package. To give it a "prettier" appearance you should peel the zucchini, but it is not necessary.
  • Remove the pesto for the blender and make the green sprinkle by blending the ingredients for that. 
  • This step is for those who want to make zucchini pasta like I did. Start by peeling away the skin of the zucchini. Using a vegetable peeler start peeling the zucchini lengthwise into thin strips whilst turning the zucchini, and gather all the zucchini "pasta" in a bowl. It is that simple, and a great alternative for pasta if you want a meal that is not quite as heavy.


I served this with cherry tomatoes, a pinch of maldon salt and freshly ground black pepper. I hope you liked this recipe as much as I did, and let me know if you did!
