Oil Free Vegan Thousand Island Dressing

 

A quick and simple recipe for vegan thousand island dressing, which tastes amazing on top of a salad, sandwich or on homemade kidney bean burgers. I love making my own gluten-free whole grain bread and use this as a sandwich spread underneath lots of fresh vegetables! This is a lot healthier than the traditional version, and is completely without any animal products. The base for this dressing uses organic firm & silken tofu as opposed to mayonnaise, and even with this change this tastes a lot better than the store-bought dressing.

 

Ingredients:

  • 300g firm & silken organic tofu
  • 4 pickles
  • 1 heaped tbsp tomato puree
  • 1/2 red onion, finely chopped
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper

 
Directions:

  1. Finely chop the pickles and onion. Combine all the other ingredients together in a blender and add in the pickles and half of the chopped onion, and blend until smooth. Pour the dressing into an airtight container, stir in the remaining onion, and store in the refrigerator.

 

Oil Free Vegan Thousand Island Dressing

 

This can probably keep in the fridge for about 1 week, provided you store it in an airtight container. Hope you guys try out this recipe, it is great way to make a salad more exciting without adding traditional unhealthy dressings!
