Vibrant Vegan Green Pea Soup


Soups are super tasty at any season, and one of my favorite ways to get dinner done and ready on the table in less than 20 minutes. If you use frozen green gourmet peas you will get a beautiful green color, but you can also use canned or pre-soaked green peas, at the expense of the color, not taste. If you'd like you can serve it with healthy homemade garlic bread, but it is delicious on its own as well.

Ingredients, serves 4 people:
  • 1 litre vegan vegetable stock
  • 750g frozen green peas
  • 3-6 cloves garlic, to taste
  • 3 tbsp cornstarch
  • A dash of soy milk
  • Freshly ground pepper, maldon salt and additional soy milk to garnish

Directions:
  • Bring the vegetable stock to a calm boil, and add the peas and chopped garlic and let sit for 1 minute. Take the pot off the oven and using a blender/food processor blend until completely smooth. Add in the cornstarch and blend again.
  • Bring the soup back to a boil and stir continually until the soup has thickened properly, probably 5-10 minutes. At first the soup will have a watery consistency, but do not add more starch. The heat will make the cornstarch absorb the water and give it the right consistency. Add a dash of soy milk (not much) and serve with freshly ground pepper, maldon salt and soy milk.
