Vegan Walnut Raisin Protein Scones


Quick, healthy and easy. Whenever I want to make a little more "fancy" breakfast for my family I dish up a batch of these, and it only takes me 15 minutes, including cooking time! I use protein powder (Sunwarrior Raw Vegan Protein Powder, which is gluten-free) instead of flour and that provides a great amount of protein per serving, which is the perfect recovery meal after a morning workout. The raisins add natural sweetness so you do not need to add anything else. Like all other scones they get kinda dry if you do not eat it with something moist, so I make my own sugar-free berry "jam" from frozen berries, usually with raspberries.

Ingredients for approx. 25 scones:
  • 400g gluten-free oats (ground into a flour/use oat flour)
  • 4 scoops natural unflavoured protein powder (vanilla flavored works too)
  • 1 tsp baking powder
  • 40g raisins
  • 60 g walnuts
  • Cinnamon and/or vanilla essence (optional)
  • Water until right consistency (more on that below)

Directions:
  •  Start with preheating the oven at 200 degrees Celsius/392 degrees Fahrenheit. Mix all ingredients, except for the water. Start gradually adding water until you have a slightly chunky dough. The consistency should not be as thin as pancake batter, but more like a porridge if that makes sense. 
  • You should be able to form anywhere from 20-30 scones depending on how big you make them. Using two tablespoons place them out on a baking sheet, and bake in the oven until they are slightly golden and firm, roughly 7-15 minutes. 

You can experiment with other dry fruits and nuts if you'd like, but walnut and raisins are my favorite combo so far. Enjoy!
