Healthy Vegan Spinach-Broccoli Soup

So this is one of my personal favorite soups so far. I love broccoli and spinach, and the combination in this soup is delicious!

  • 250-300 grams fresh leaf spinach
  • 1 yellow onion
  • 1-2 cloves garlic (or 1 ts garlic powder)
  • 1 head of broccoli
  • 1/2 green zucchini
  • 1 litre vegetable broth 
  • 3 tbsp cornstarch
  • Your favorite plant based milk to garnish (optional)
  • Salt and pepper

  • You are going to start off by bringing the broth to a boil and add vegetables (except onion and spinach) and cook until nearly tender. 
  • In a non-stick pan add onion and sauté it (I use 1 kcal spray, but you can use water/oil) and add the spinach bunch by bunch until all of it have sunk together.
  • Combine ALL ingredients into the pot and blend using a blender/food processor, and let boil on medium/low heat for at least 5 more minutes, before adding a dash of soy milk (optional). The heat will activate the cornstarch and will allow the soup to thicken properly. If you'd like you can garnish using the milk and serve with freshly ground black pepper and a pinch of maldon salt.
