Easy Vegan Pasta "Bolognese"


This is a really easy, healthy and fast dinner you can make when you only have about 20-30 minutes to get the dinner ready. You can use whatever veggies you have on hand to make this dish, but after a lot of experimenting with different alternatives, this is my personal favorite so far. I'm not the biggest fan of pasta in general, so i usually just eat the sauce with leaf spinach or any other salad I find in the fridge, but when I do have pasta I always use brown rice pasta.

Ingredients, makes 4 servings:
  • 2 large carrots
  • 1 onion, red or yellow 
  • 2-3 cloves garlic
  • 4 medium sized white mushroom
  • As many sun dried tomatoes you want (i use 6 large, not marinated in oil)
  • 1 400g can diced tomatoes (might need a dash of water as well)
  • 150 g dry TVP mince mixed with 450g boiling water
  • 50-75g dry brown rice pasta pr person
Spices, fresh or dried:
  • Basil
  • Rosemary
  • Oregano
  • Thyme
  • Black pepper

Directions:
  1. Lightly brown all the vegetables, including the sun dried tomatoes, in a saucepan and add the canned tomatoes. Let the sauce simmer while you start cooking the pasta, and adding the TVP mince with boiling water in a separate bowl. Let this sit for about 5 min, before adding the now hydrated TVP mince into the saucepan along with the veggies. Let this simmer until the carrots are tender and the pasta is al dente.
  2. If you find that the sauce is too dry, add in however much water you find necessary. Serve with lots of fresh basil leaves, freshly ground black pepper and a pinch of maldon salt.
