Vegan Indian Tikka Masala Coconut Curry

If you ever find yourself missing indian tikka masala with chicken then you should try out this recipe. It is also really fast to make, especially if you have cooked rice in your fridge. If not then the only time consuming part of this is cooking the rice, which only takes about 20 minutes anyways. In Norway I have only so far managed to get my hands on TVP mince, but preferably I would have used TVP chunks, as it will mimic the texture of chicken better, but taste wise it is just as good. Serve it with black/brown rice and salad, or for a lighter version you can skip the rice and just serve with salad leaves.

Vibrant Vegan Green Pea Soup

Soups are super tasty at any season, and one of my favorite ways to get dinner done and ready on the table in less than 20 minutes. If you use frozen green gourmet peas you will get a beautiful green color, but you can also use canned or pre-soaked green peas, at the expense of the color, not taste. If you'd like you can serve it with healthy homemade garlic bread, but it is delicious on its own as well.

Vegan Brown Rice Porridge / Brun Risgrøt

Maybe not one of the most international dishes, but rice porridge/risgrøt is a staple in a Scandinavian diet, especially around Christmas time. Every Christmas eve it is tradition that we have rice porridge for lunch, some families even hide an almond in the pot and whoever gets it win glory and honor for the following year. And perhaps a chocolate or a marzipan. Usually it is made with white rice and whole fat milk, but this vegan take on the dish is not only delicious but healthy as well. It does not require alot of work making this, but you have to pay close attention to the rice once you have added the soy milk.

Vegan Thai Peanut Coconut Milk Curried Vegetables

One of my all time favorite healthy thai inspired dishes. I say inspired because this recipe is probably not something you would get served at a traditional thai restaurant, but still the flavors are there. If you have not tried black rice you really need to go get it now! Personally I find it too chewy to simply eat alone, so you can do like me and make a mixture of brown jasmine/basmati rice and the black rice. The black rice has a lot more nutrients than brown rice, and I think it both looks and tastes a lot better.

Vegan Walnut Raisin Protein Scones

Quick, healthy and easy. Whenever I want to make a little more "fancy" breakfast for my family I dish up a batch of these, and it only takes me 15 minutes, including cooking time! I use protein powder (Sunwarrior Raw Vegan Protein Powder, which is gluten-free) instead of flour and that provides a great amount of protein per serving, which is the perfect recovery meal after a morning workout. The raisins add natural sweetness so you do not need to add anything else. Like all other scones they get kinda dry if you do not eat it with something moist, so I make my own sugar-free berry "jam" from frozen berries, usually with raspberries.

Low-fat Vegan White Gravy

Hearty, thick and filling. Exacly what gravy should be. This is delicious served with "meatballs", burgers, potatoes or what have you. The minuscule amount of fat in this recipe comes from the tofu and plant-based milk, which varies on what brand you use, but it is a very little amount all over especially if you compare it to the traditional version, loaded with margarine, cream, milk, etc.

Heart-Healthy Garlic Bread

These garlic breads are an easy, tasty and healthy version of the original white loaf covered in butter. I usually serve them along with my homemade tomato soup, the recipe for that is here, but you can serve it as a snack or side dish to whatever you like. 

Delicious Vegan TVP "Meatballs"

This is so far my little sister's favorite dish of mine. Unfortunately she is not exactly the biggest fan of foreign and exotic food, so this is more hearty and to her liking. I am very proud to have been able to nail the meatballs at my first try, especially since I know how hard it is to prevent them from dissolving. You can always alternate with the spices, I am just writing how I made them. Next time I think I will dish up a healthy BBQ sauce and add chili and jalepenos to the meatballs. Perhaps serve it with rice instead of potatoes, but we shall see.

Vegan Homemade Tomato Soup

Easy and healthy dinner that you can filling enough on its own, but you can cook up some additional wholegrain/gluten-free macaroni next to it if desired. Today I made some garlic bread with it, the recipe is found here. This is one of my favorite soups so far, and it can be served as an entree or an appetizer. Next time I'm probably going to serve this as an appetizer before some healthy vegan sugar-free whole grain pancakes.

Healthy Vegan Vegetable Lasagna

I always dish up a lasagna when I have a lot of friends or family coming over, and after trying different vegetables each time I feel like I have found the perfect combination. If you do not like some of these vegetables or do not have access to them at the moment, feel free to switch it up and use whatever you have at hand. This recipe makes a pretty large portion, enough for 4-6 hungry people, so you are going to need a large lasagna pan.

Healthy Homemade Taco Spice Mix

I never buy the packaged taco spice mixes since they are usually very high in both sugar and salt, so I came up with a great recipe to make your own. This truly tastes great so I highly recommend you try it out, and you can use as little or as much as you please, depending on how spicy you like it. 

Easy Vegan Pasta "Bolognese"

This is a really easy, healthy and fast dinner you can make when you only have about 20-30 minutes to get the dinner ready. You can use whatever veggies you have on hand to make this dish, but after a lot of experimenting with different alternatives, this is my personal favorite so far. I'm not the biggest fan of pasta in general, so i usually just eat the sauce with leaf spinach or any other salad I find in the fridge, but when I do have pasta I always use brown rice pasta.

So I can't really take credit for coming up with this recipe. It is originally inspired from Susan Voisin, the author of one of my absolute favorite vegan recipe-blogs. I have made some few modifications to the original recipe, and felt that it would be suiting to post my adaption of this recipe.
